Summer Recipes

I enjoy cooking, and I love finding new, delicious recipes that are also healthy! Here is one of my favorites...enjoy! And feel free to leave a favorite recipe (or two, or three...) of yours in the comments section. I'd love to try them out!

Springtime Layered Egg & Asparagus Salad

Serves 4

Ingredients:
1 lb. asparagus, trimmed and cut into 2 inch lengths
2 cups halved grape tomatoes
5 hard-boiled eggs, peeled and sliced
3 Tbs. capers
4 scallions, trimmed and sliced
1 cup cubed cheese (Swiss or Havarti work best)

Instructions:
Steam or blanch asparagus. Drain and refresh under cold water.
Layer salad ingredients in glass bowl. Start with 1 cup tomatoes, then in order add eggs,
capers, scallions and cubed cheese. Top with remaining tomatoes and asparagus or repeat layers.
Sprinkle croutons on top.
Serve with your favorite dressing.

Yum yum! Just talking (err...typing?) about it makes me want to make it right now!
